Food Safety Management Checks & Formats:

1. Microbiological Verification
Food Handler Hand Swabs
Food Contact Surfaces Swabs (Utensils, equipments, plates, etc.)
Water Samples (recommended points: water collection point, treated water, kitchen, dining halls, work building, hostel building, etc.)
Food Samples – Cooked food items, salads, etc.

2. Internal Food Safety Audits
Internal food safety audits are performed by FOODEXO food safety management system. The team members evaluate all sectors for food safety protocols that are undertaken through regular inspections.

3. External Food Safety Audits This is conducted by an external food safety audit company that will undertake third party independent food safety audits on a quarterly basis.

4. Food Handlers of FOODEXO (Including managers & supervisors of the kitchen)
a) All food handlers / employees of FOODEXO kitchens will be trained on a Basic Food and Hygiene
b) This is minimum 2 - 3 Weeks of training and the course content should include:-

• Introduction to Food Hygiene
• Food Hygiene Awareness
• Microbiology – Bacteria, Virus, Fungi & Parasites
• Good Hygiene Practices
• Personal Hygiene
• Cleaning and Sanitation
• Pest Control, etc

QUALITY ISSUES:
Both customer and product issues are recorded in the system and immediate rectification will be processed.
